
On Sunday, I made this tasty fish dish. I lightly fried the fish and then made a yummy tomatoe, onion, pepper & garlic sauce for the fish to simmer in. Then I drizzled a bit of extra virgin olive oil on top. I purchased a few sweet potatoes because they were on sale and I decided to make a light version of candied yams by adding a little bit of dark brown agave syrup to the sweet potatoes after it was cooked. I also cooked some spinach and rice. I always try to eat at least one green vegetable for dinner. I love to cook but I rarely have time. One of my favorite dishes to make and eat is Curry Chicken with white rice. I love the yellow thick sauce with potatoes and chicken. I’m getting hungry thinking about it:) In addition I love to make barbeque chicken baked and on the grill. I also make a mean Mac and Cheese pie. One of my goals for the rest of this year and beyond is to make time in my schedule to cook more meals at home instead of eating out. What are some of your favorite dishes to make and eat?

Okay, girl... that looks SOOO RIDICULOUSLY good. I saw this blog posts hours ago from my cell phone and made a mental note to come home and comment and BEG for that fish recipe! :)
